Darl Bars are hand-baked muesli bars made in small weekly batches at the Thanks Darl bakehouse in Byron Bay. Laura and Joel build every bar around a high-protein blend of Australian pumpkin seeds, organic sunflower seeds and flax seeds, then fold through Australian-grown nuts, organic coconut and buckwheat, bind it all with organic brown rice syrup and macadamia oil, and bake until the bar is crunchy on the outside, chewy in the middle and only a tiny bit sweet.

The result is a snack that eats like a treat but behaves like real food – plant based, gluten free, a source of protein and low in sugar, with no refined sugar hit and none of the bloat that comes with it. Nuts, seeds and oils are sourced direct from Australian farmers wherever possible, including pecans, hazelnuts, almonds, macadamias and cold-pressed macadamia oil.

Choose a single 40g bar, or a 200g pack of five to keep at home. Shelf life is 9 months and no refrigeration is required.
